Caffeine Free Chai Decoction

This delightful hot drink is perfect for cooler weather & those who love a spicy chai but want one without the caffeine. The base of this liquid is known as a decoction - essentially a way of brewing plant root/bark/rinds used in herbal medicine to gain the beneficial therapeutics of the plants. I like to make this in batches, strain into bottles & they keep well in the fridge for up to 4 days. I'll fill a mug with a third of the liquid & then add hot frothy milk mixed with powered turmeric, honey to sweeten & collagen to make a caffeine free turmeric chai.

Makes approx. 250mL liquid  (3-4 serves)

Ingredients (decoction only): 

10 clove buds

4 pieces star anise 

3 black cardamom pods (or green)

2 cinnamon quills

3 black cardamom pods (or green)

1 tsp fennel seeds

1 large thumb of ginger - cut into slices 

1/2 tsp tsp whole pepper kernels 

1/2 piece of nutmeg (or 1/2 tsp powdered) 

500mL filtered water 

 

Method: 

1. Place all spices into a saucepan with the water & bring to a rolling boil on high heat

2. Once boiling, reduce to low & simmer with lid on for 20-30 minutes 

3. Strain liquid & add to bottle, store in fridge

4. To make a milky tonic ~ fill a mug with one third of the decoction, then add hot frothy milk mixed with powered turmeric (approx. 3/4 tsp) & a little honey if you like
